Bacon – I prefer to use a couple of slices of bacon and then cut it up into chunks. You can also use bacon bits if you prefer.

Pasta – You are looking for small pasta that doesn’t take your attention away from your homemade minestrone. We used small macaroni but anything similar will do.

Vegetables – Its recommended to start with celery, carrots and onion and then mix and match with other ingredients. We used celery, carrots, onion, potato, green beans, and garlic.

Stock – I love to make my own instant pot vegetable stock and then freeze it into portions. I can then defrost and load into vegetable soups.

Tomatoes – You can use any type of tinned tomatoes. You can also use Italian seasoned ones for extra flavour.

Seasonings – I recommend for the best homemade minestrone that you include salt, pepper, oregano, tomato pasta and Worcester sauce. Though I wanted more flavour and used some Moroccan tomato paste in my fridge that needed using up.

  • Sauté. Start by sauteing your bacon in the soup maker with some extra virgin olive oil.
  • Load. Then load up your soup maker with everything but the pasta, white wine, and seasonings.
  • Beeps. Put your soup on the chunky soup setting and it will automatically set it to 28 or 30 minutes depending on your soup maker brand.
  • Reload. After 10 minutes add in the rest of your ingredients and cook for the rest of the cook time.

  • Dice your bacon and load into the soup maker with extra virgin olive oil. Sauté for 5 minutes. Cancel sauté. Whilst the soup maker is doing the bacon peel and dice your vegetables.

  • Add in the vegetable stock and tinned tomatoes first and stir.

  • Then add in everything else from the main ingredients list, stir and then place the lid on your soup maker.

  • Cook for 10 minutes on the chunky soup setting. After 10 minutes remove the lid and add all the 10 minutes later ingredients and stir.

Notes

Swaps. Instead of regular tomato paste use what you have in. We used some Moroccan tomato paste that needed using up.

Pasta. Go with any small pasta that you have in. We used small macaroni.
